Power Packed Veggie Smoothies

We traveled from Colorado to Florida over the holidays to celebrate with my family, and were on the road for 5 days over a 10-day span – with a Pomeranian in tow. Let’s face it: local eating options are slim when traveling with a pet, and we found ourselves off of our usual diets with fast food and even faster snacks. While fun, we are indeed feeling a bit bloated and ‘blah’ with all of our holiday indulgences.

January is the month to get back on track, and one of my favorite ways to get my insides and my outlook feeling brighter is with this power-packed green veggie smoothie. I find smoothies to be a great way to add more fruits and vegetables to my diet. When I commuted to the Denver Tech Center, I would take one into the office every day to help me face the corporate craziness ahead.

Everyone has a ‘go-to’ smoothie and this one is mine. It helps to have a high-speed blender like my reliable Vitamix 750 blender, but it isn’t necessary.  You may have to ‘tamp down’ the blender bowl contents to get the blending going. Vitamix assumes I am lazy, and therefore even has a ‘smoothie’ setting on the dial. I sometimes run it through twice for extra creaminess. It may seem like a lot of ingredients but really isn’t, and the mixture blends up so creamy and delicious.

It is important to start with the liquid when building a blender smoothie. Be sure to add the flax and chia seeds to the liquid first, so they start to absorb the liquid and blend evenly. The chia and flax seeds help the smoothie mixture gel, while the nutritional yeast flakes add nuttiness to the flavor.

A note on the kale: my “go-to” is lacinto or dinosaur kale, vs. curly leafed kale….but I buy the curly when the lacinto isn’t in-stock. The lacinto kale taste is a little milder.

I typically pour the smoothies into pint glasses (when not commuting) – a nice alternative use to beer. 😉 I hope you like this smoothie and that it helps you kickstart your 2019 goals into high gear!

YIELD:  About 20 oz or 2 large smoothies

INGREDIENTS (Add to blender in order)

1/4 C organic carrot juice
1/4 C organic pineapple juice
1/2 C filtered water
1 Tbsp flax seeds
1 Tbsp chia seeds
1 Tbsp nutritional yeast flakes
1/2 organic granny smith apple, cored
1/2 organic valencia orange
1/2 organic small avocado
1 C organic kale, de-stemmed and torn (about 2-3 medium-sized leaves)
1 C organic spinach leaves (about a handful)
1 C ice cubes (a scoopful)

METHOD

  1. Add ingredients in the order above to a blender.
  2. Hit the smoothie setting on your Vitamix, or just gradually increase your blender speed to medium-high speed for approximately 60-90 seconds or until smooth.
  3. Pour and enjoy!
